Happy Saturday. Hope you are all having a good weekend. I am just working on a project that is going to consume my life for the next few weeks. But seeing as how my favourite day of the year is just around the corner and no before anyone jumps to any conclusions it’s not Valentine’s Day, it’s pancake Tuesday. OMG YES!! I remember when I was younger I used to love it every year, as in school my teachers would always make pancakes for the class and it was one of the only days that I would be up and ready to rock. I am not and never have been a huge fan of the store bought ones, as they just don’t taste the same as home made. I even remember that when I was younger if I was staying over at someone’s house, if the mother’s asked what I would like for breakfast I would always say pancakes (cheeky git) and for my later years in life I would tell my family, not to buy me cakes for my birthday, just to make me a stack on pancakes and put some candles on top. Ok, you get the gist, Saoirse loves pancakes.
Now when I went vegan, it was pancakes and cheese that I got most upset over, we will save the cheese for another day, but with a quick google I was quite happy to learn that pancakes can be sooooooo easy to make with out dairy milk, eggs and butter. You just need some alternatives. not only are they easy to make, but they also work out as being far healthier too.
The ingredients I use are sooo simple
- 3 Bananas
- 1.5 Cup of Almond milk
- 1.5-2 cups of flour *You need it to be more thick than liquidy, so add in more flour if you think it is needed.
- 1 Scoop of your own protein powder (I use vanilla or chocolate)
- 0.5 cup of oats & Chia seeds.
Add all the ingredients into a blender, I use my NutriBullet – Et voila!! Put some coconut oil in the pan, let it melt, then put a little bit of your mix in and let it cook, wait until it is dry to flip it over (see what I mean at 1.50 in my video). This batch will get you between 8-10 pancakes, maybe a bit more if you do them smaller 🙂
For toppings and sides, I usually pop some strawberries, raspberries & blueberries along the side and either some coconut or almond yogurt, peanut or almond butter or chocolate sauce and will then sprinkle some maple syrup or coconut nectar over them 🙂
